We present a home-style version of a beverage featured on our latest cocktail list. It's a party-sized premix that's bursting with the tastes of the holiday season, making it ideal for a festive gathering. Any leftover syrup to use in morning drinks, desserts, or to make another batch of bikinis.
The Bikini Cocktail
Serves 10 people
For the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Combine all the items inside a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, remove from the stove allowing it to reach room temperature completely. Decant into a clean bottle, cap it and refrigerate it in the fridge, it can be stored for around one month.
To make Batch Mix: Mix all the liquids into one large bottle, allow it to infuse for one hour, then filter it , ideally through muslin, making it perfectly clear.
When ready to serve: Add 85ml of the premix to a cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Pour to a chilled martini glass or a similar vessel, decorate with some cranberries and finish using a quick spritz of mandarin oil over the drink.
